Korean barbecue, gogi-gui (고기구이) or "grilled meat," is a table ritual. Thin cuts of beef and pork cook in small batches on a grill in the middle of the table, then get wrapped with leaves, condiments, and banchan and eaten in one bite.
Two families sit on every serious table: yangnyeom (양념, marinated) and saeng gogi (생고기, unseasoned). The rule that separates good KBBQ from great KBBQ: cook the unseasoned meat first, while the grill is clean. Save sugar-heavy marinades for last.

Thickness matters as much as the name. Bulgogi and chadolbaegi are paper-thin (2–3 mm). Samgyeopsal is thicker (8–10 mm). LA galbi is flanken-cut across the bone so three bone cross-sections show on each strip.
Beef, Explained
Bulgogi (불고기) — "fire meat"
Thin ribeye, sirloin, or chuck in soy, sugar, garlic, sesame oil, and grated Asian pear. Caramelizes in a minute or two. Approachable, sweet-savory — the first-impression cut. Sugar burns if you crowd the grate. Marinate 4–8 hours; past 12 hours the pear enzymes turn thin slices mushy.
Galbi (갈비) — the celebration cut
Wang-galbi is thicker and often butterflied; LA galbi is sliced across the bones (lateral axis, popularized in Los Angeles) and cooks faster with more char. Same marinade family as bulgogi, bigger voice, 8–24 hours. Done when the glaze is lacquered and the bone wiggles.
Chadolbaegi (차돌박이)
Unmarinated brisket point sliced nearly translucent. 30–60 seconds. Dip in sesame oil, salt, and pepper. This is why you start with unseasoned meat: you actually taste the beef.
Kkot-deungsim (꽃등심) — "flower loin"
The ribeye of the Korean grill. Usually unseasoned. Fine white marbling, creamy fat. Salt is enough.
Deungsim / Ansim + the butcher's specials
Sirloin (beefier, firmer) and tenderloin (mild, lean, easy to overcook). Galbisal, kkotsal, anchangsal, buchaesal are the butcher's specials: boneless short rib, outside skirt, oyster blade. Unseasoned. Start the meal with these while the palate is clean.
Pork, Explained
Samgyeopsal (삼겹살)
The most-ordered grill cut in Korea. Unsalted pork belly, no marinade. Fat renders, edges crisp. Cut into bite-size squares with shears on the grill. Ogyeopsal leaves the skin on. Pair with pajeori (spicy scallion salad), ssamjang, raw garlic, grilled kimchi.
Moksal (목살) · Hangjungsal (항정살)
Neck/collar — thin veins of fat, springy, less heavy than belly. Hangjungsal — jowl/collar point. Small yield, premium chew, treat it like a pork ribeye.
Dwaeji-galbi · Dwaeji bulgogi
Sweet soy ribs and gochujang-sliced pork. Crowd-pleasers. Sugar burns — medium heat, change the plate when it goes black.
If you only order three things: samgyeopsal + LA galbi + chadolbaegi.
Marinades
A Korean marinade seasons, tenderizes, and glazes. The tenderizer is grated Asian pear (or kiwi or apple).
Bulgogi — 2 lb thin beef
Marinate 4–8 hours.
Galbi — 2–3 lb ribs
Overnight is the sweet spot (8–24 hr).
Spicy pork — 2 lb
2–6 hours. Do not treat gochujang like a two-day steak rub.
| Cut | Minimum | Sweet spot |
|---|---|---|
| Thin beef (bulgogi) | 2 hr | 4–8 hr |
| Galbi ribs | 4 hr | 8–24 hr |
| Spicy pork | 1 hr | 2–6 hr |
Sauces
Ssamjang (쌈장)
2 Tbsp doenjang + 1 Tbsp gochujang + 1 tsp sugar/rice syrup + 1 Tbsp toasted sesame oil + garlic + scallion + sesame seeds. Dime-sized smear in the leaf.
Gireumjang
Toasted sesame oil, coarse salt, cracked pepper. For unseasoned belly and thin brisket — not on marinated galbi.
Others
Soy-garlic for bulgogi. Gochujang vinaigrette optional. Salt alone for premium unseasoned beef.
Ssam — The Wrap
One bite. Leaves: lettuce, butter lettuce, perilla / kkaennip.
